Adjust rack to top position. Place a #baking sheet{} on top rack and preheat oven to 450°F. Wash and dry produce. Halve, peel, and thinly slice @onion{1%unit}. Dice @butternut squash{1%unit} into ¼-inch pieces. Strip leaves from stems of @thyme{2%tsp} and roughly chop leaves.

Melt @butter{1%tbsp} in a #medium pan{} over medium heat. Add onion; cook, stirring occasionally, until browned and softened, ~{10%minutes}. If onion begins to brown too quickly, add a splash of water. Stir in @sugar{1%tsp} and @balsamic glaze{1%tsp}. Cook until caramelized and jammy, ~{2%minutes} more. Season with @salt{½%tsp} and @black pepper{¼%tsp}. Turn off heat.

While onion cooks, carefully toss butternut squash on prepared #baking sheet{} with a drizzle of @olive oil{2%tbsp}, half the chopped thyme, salt, and black pepper. Roast on top rack until tender and lightly browned, ~{12%minutes}. Transfer to a #medium bowl{}; set aside. Wipe off sheet.

Meanwhile, in a #small bowl{}, combine @ricotta cheese{½%cup}, remaining chopped thyme, and remaining olive oil. Season with salt and black pepper.

Lightly oil #baking sheet{} with @cooking oil{1%tbsp}. Place @flatbreads{2%units} on sheet. Evenly spread flatbreads with ricotta cheese mixture, then top with caramelized onion, butternut squash, and @white cheddar cheese{½%cup}.

Bake flatbreads on top rack until edges are golden brown and white cheddar cheese melts, ~{12%minutes}. Transfer to a cutting board and drizzle with remaining balsamic glaze to taste. Slice into pieces, divide between plates, and serve.
